Apple, date and coconut cake

I have been making this cake a few times a week since my mother-in-law made it for my birthday. It is so quick and easy, and this method doesn’t require a cake mixer. It is a moist cake, which also means it keeps well for a few days after it is baked. It’s the perfect autumn cake.
