Apricot and thyme tart

This summer, I’ve made this tart a few times as I love baked stone fruit. It’s easy and quick, especially if you use store bought puff pastry. Carême is the best store-bought pastry in Australia and you can buy it at many supermarkets now, but if you want to make your own pastry, I’ll include a recipe for a shortcrust one. Last time I made it in Tasmania when I visited my brother and his family. They didn’t have a standing mixer or an electric beater, so I just used a wooden spoon to beat the cream and sugar, and it worked great!

We didn’t have icing sugar, but if you do you can sprinkle some on top with a sieve.
