I get most inspired to cook when I have limited ingredients, and this dish cost about $9 to feed five adults and three kids. Sometimes when we have extra people for dinner, I can stretch the meal to feed more people. I do enjoy being social and having people for meals, even though it’s always a bit chaotic at dinner time with the kids. To stretch a meal to make it feed more people, I usually serve it over rice or pasta, and if it’s a stew-type meal I have made, it’s good to have legumes in it so it will fill people up. These simple kinds of meals are best if they are not made in a rush; it’s better to cook them low and slow and you’ll have a more flavourful meal.
