Dad’s Xmas cake

or fruit cake for anytime of the year

My dad, who doesn’t cook, bakes this cake every year. He loves it so much that he bakes them throughout the year and sends them to his friends. After baking, he freezes the cake and takes it out to defrost, and he thinks it tastes just the same. Whenever I visit my mum and dad, the cake is always in a container. We either eat it by itself or sometimes with a lot of butter.

I like it because it’s very moist, doesn’t require much time, and is perfect for any time of the year.
