Fresh and fruity fennel salad

with peaches, nuts and sheep cheese

My favourite way to eat fennel is raw, and this salad is a great side dish for any Christmas meal. I made it to take to a friend’s barbecue over the weekend, it was a hot and humid afternoon and this refreshing salad paired well with the barbecued meat.
