Greek cabbage rice

Cabbage isn’t a vegetable I cook often, but whenever I do I’m reminded of how much I love it. The fridge was nearly empty and I was hungry for lunch, so I decided to make a meal with the lonely cabbage. This dish is similar to other Greek dishes like spanakorizo (spinach rice) or prasorizo (leek rice, a recipe I’ve shared before). But instead of spinach or leek, cabbage is used. I love the flavour and sweetness the cabbage and tomato add to the dish and its a very affordable meal. You can serve it as a side with meat or enjoy it on its own, like I do.
