Hummus and eggplant
with flatbreads
About 10 years ago I was in Greece with some friends who then went on to Turkey. I went to meet them in Turkey, down the bottom in a little valley where everyone camped. I stayed in a little tent by myself and breakfast and dinner was included with the stay at the campground. I didn’t have much money, so I would have a big breakfast and dinner and not much in between. I still remember the smell of the grilling eggplants and they would serve them like this. We hiked to a small beach in the high summer and slept on the pebbles under the stars, it was such a special time.
