Potato and cauliflower curry

This week I got a fruit and vegetable box delivered since we are getting back into the swing of things after going overseas. They’re great because they are cheaper than shopping at the produce shop and it’s very convenient (as shopping with the kids is not something I really enjoy). It’s also helpful because it’s one less thing I have to make a decision about and otherwise we tend eat the same thing. But the main reason I like getting them is that it pushes me to be creative with what we are eating and so that we use all the produce that week.

This week there was cauliflower in it and it’s not a vegetable I usually choose. I was going to put it in a pasta but because it’s colder now I felt like a curry. It doesn’t have many spices and I happened to have everything in my pantry already. I would’ve liked to serve it with fresh coriander but I did not have in the garden unfortunately.
