Prawn pasta

with tomato, fennel and glass of cold white wine

Last week we spent a few days in the charming seaside town of Yamba. They have a great fish shop, and fresh prawns are delivered daily from a nearby trawler. This pasta dish is best made with large uncooked prawns, but cooked ones will work too, although they won’t absorb as much of the flavour.
