A mid-week pick-me-up
This nostalgic treat is a fun activity to get the kids involved with, and it requires minimal effort and time. It’s a great dessert to have in the fridge for unexpected guests, and you can use any nuts or chocolate you prefer.
Chocolate, 2 x 250g blocks
Coconut, 1/2 cup desiccated
Macadamia nuts, 1/2 cup
Pistachio nuts, 1/2 cup
Raspberry liquorice, 1 cup
Marshmallows, 2 cups
Melt the chocolate in a large bowl using a bain-marie over a pot of boiling water. I prefer Whittaker’s chocolate, and I use one block of dark ghana and one of milk. But you can use any flavour or chocolate you prefer.
While the chocolate melts, lightly toast the desiccated coconut in a small pan. Stir occasionally to prevent burning, as it can happen quickly. Toast until fragrant then set aside.
If your nuts are whole, chop them into small pieces and place them in a large bowl. Chop the red liquorice (or red snake lollies) into small pieces and add them to the bowl. Next, chop the marshmallows in half and add them as well. Pour in the dessicated coconut and stir everything together with a wooden spoon.
Once the chocolate has melted, carefully pour it into the bowl with the dry ingredients and stir until combined.
Line a 20cm x 25cm dish with baking paper. Pour the mixture into the dish and spread it evenly with a spatula.
Place the dish in the fridge until it has set, then cut it into pieces, however big or small you like.
This treat will keep in a container in the fridge for weeks, if it lasts that long.
