Three milk cake

Last weekend, we were fortunate enough to stay with my best friend Sophie. It was Sophie who let me share her shop space 10 years ago in Auckland. She ran a florist from the space while I ran a cafe.

We travelled down to Thirroul, a place I’d never been before but instantly fell in love with. After a flight, we caught a train through the bush and arrived at the seaside, with a massive escarpment overlooking the townships.

The kids played happily all weekend, and Jack built Sophie a table. We had a dinner party one night which turned out Mexican themed because Soph had a big bowl of limes and we wanted margaritas.

I made a Tres Leches cake, which is made with whipped egg whites and a bit of flour. After baking, you pour three different types of milk over the top and let it soak in. Soph has recently moved house and her oven doesn’t work. She uses a tiny plug-in oven to cook, but I enjoy cooking in a limited kitchen and everyone including the kids enjoyed the cake.

Soph didn’t have nay cinnamon, but usually this is sprinkled on top!
